Before going out to dinner with friends, I love to have them over for cocktails and hors d’oeuvres to whet the palette. It gives everyone an opportunity to catch up and visit with each other in a more intimate setting without the distraction of a giant meal. At any given cocktail party I throw, there is one dish that is guaranteed to make an appearance each and every time. It is absolutely delicious, always a crowd pleaser, and I think quite possibly the easiest hors d’oeuvre ever – with the exception of chips in a bowl. But I mean come on, barring a sports party, barbecue, or drinks with your best friend or family, when is it ever okay for chips in a bowl… really? But I digress.
The ingredients are simply goat cheese, roasted red pepper, and kalamata olives. Really any olive-bar olives will work, but the great thing about this dish is the cheap bottled kalamatas are just great. So, just use what you have or what you like! 🙂 I like to serve this with thin slices of baguette, but a simple artisan cracker will do the trick just as well.
Slice the roasted red peppers vertically into strips approximately 1/4 to 1/2 inch in diameter. Then place cheese, olives, and peppers onto serving platter along with baguette or crackers.
You are ready to serve! Now how easy was that?? This particular dish is great on its own like I said if you plan on eating a large meal out later, or can be served among many other hors d’oeuvres at a party. Either way, this little baby is all about understated sophistication and will hold it’s own. Love it.
